Zeesy’s Challah

Step 1:

4 packets or 4 tbsp. dry yeast

3 1/2 cups warm water

1 1/2 tbsp. salt

1 ½ cups sugar

 

Step 2:

6 eggs

1 cup oil

5 lbs and 1 cup flour (13-14 cups)

 

Activate the yeast with warm water. Add sugar and salt. Add 1/2 of the bag of flour and mix very well. Add eggs and oil and mix well. Add the other 1/2 of the bag of flour, plus 1 cup and knead, until dough feels nice and smooth. 

Cover the dough with a damp towel or (this I learned from my mother-in-law!) smear dough with a thin layer of oil and allow dough to rise for 2 hours. Take a piece of dough for the Mitzvah of Challah, braid the dough, put into greased pan and brush with egg and toppings. Bake on 375º for 40 minutes or 20 minutes for small rolls.
